Why almond flour gets its own measurement

Almond flour is lighter by the cup than many wheat flours, and almond meal can measure differently from finely blanched almond flour. That matters when recipes switch between grams and cups.

If a recipe gives grams, use the gram amount. If it gives cups, spoon the flour into the cup, level it with a straight edge, and avoid pressing it down unless the recipe says packed.
